As some of you may have seen on our instagram, during my week off of work in February I got the baking itch and made these cinnamon roll cookie bars from a recipe I pinned on Pinterest, and they were SINFUL good. I wish the blog had a widget for taste testing, because oh my god, these are just too good to describe. My roommate and I re-made them this weekend (conveniently just after the we ran out of the previous batch!) so this time I was able to snap some pics of the process because I just had to pass this recipe along!
1 box vanilla/white cake mix
1 box cook & serve vanilla pudding (4 servings) (*full disclosure in the pics below we used chocolate pudding instead of vanilla because they didn't have vanilla at our corner store... oops? they still turned out fine, but will probably stick to vanilla the next time I make them!)
3/4 cup melted butter
1/2 cup light brown sugar
1 tbsp water
2 tbsp cinnamon
8 oz. cream cheese (room temp)
1/4 cup butter (room temp)
5 cups powdered sugar
cinnamon sugar to garnish (3 tbsp sugar : 1 tsp cinnamon)
Pre-heat oven to 350 degrees. Spray 9 x 13 pan with cooking spray.
Mix all bars ingredients in a bowl. Fold/stir together until smooth.
*this is how your batter should look when it's done!
STEP 3: Spread into sprayed 9 x 13 pan. Bake for 20-25 min.
STEP 4: While bars are baking, put all frosting ingredients into a bowl. Mix together until smooth.
*tip: slowly add powdered sugar one cup at a time to avoid it flying everywhere (been there. not fun.)
Wait until bars are cooled completely (approx. 30 min) before frosting the bars. Sprinkle cinnamon sugar on top to make it pretty! :) Refrigerate for an hour before cutting into squares. Keep bars refrigerated. ENJOY!
